Grandma's Cauliflower Con Queso
I was cleaning this week and found an old notebook full of recipes in my grandmother's writing. I decided to try a recipe each week. The first one (the last one in the notebook) was for Cauliflower Con Queso. I've been looking for good recipes using cauliflower. I made it tonight. I wasn't sure if I would like tomatos w/ cauliflower, but I do. It was good and I would make it again with very few changes. Tonight I used a can of mild Hatch chile and I used a chile jack cheese. I would use two cans of chile. Jeddy doesn't like diced tomatoes, so I might use tomato sauce.
I didn't have enough energy to create a culinary still life for this recipe. I want to create a lovely image with appetizing food and dishes and linens, etc.....
There were a few requests for the recipe:
Cauliflower Con Queso
1 head cauliflower
2 Tb. butter
¼ c. ch onion
2 tbs flour
1 lb can tomatoes
1 bay leaf
2 can green chilies ch
¼ t hot sauce
1 c grated jack or cheddar
Wash cauliflower. Place in 1 inch boiling salted water. Cook 30 minutes. For sauce: Melt butter. Add onions and cook 5 min. Blend in flour. Stir in tomatoes. Cook & stir until thick. Add chiles and seasonings. Cook 5 min. Add cheese & stir until melted. Drain cauliflower. Serve topped with sauce.
Tina’s notes; I used canned Hatch chile. For my personal taste it was just a bit bland. In Albuquerque I buy frozen tubs of Bueno Chile. I can’t find them here. If that was available I would use it. Jeddy doesn’t like things with chunky tomatoes, he has requested if I fix it again that I use tomato sauce and not diced tomatos. I used pepper jack cheese. I might add more cheese to it in the future.
This could be served as a vegetable side dish or as a meat free main dish. I might try adding fried chorizo into the sauce for a variation.
